DIY: Thanksgiving Potato Alternatives

Not a big fan of standard mashed potatoes? Here’s two recipes to make instead for the holidays.

Au Gratin Full Recipe
Ingredients:
3 tablespoons butter
3 tablespoons all-purpose flour
1-1/2 teaspoons salt
1/8 teaspoon pepper
2 cups 2% milk
1 cup shredded cheddar cheese
5 cups thinly sliced peeled potatoes (about 6 medium)
1/2 cup chopped onion
Directions:
Preheat oven to 350°. In a large saucepan, melt butter over low heat. Stir in flour, salt and pepper until smooth. Gradually add milk. Bring to a boil; cook and stir 2 minutes or until thickened.

Slice potatoes and then dice onions, then transfer to a greased 2-qt. baking dish. Mix cheesy sauce in.

Cover and bake 1 hour. Uncover; bake 30-40 minutes or until the potatoes are tender. If desired, top with additional pepper.

Roasted Potatoes Full Recipe
Ingredients:
2 pound mini assorted potatoes
4 Tbsp olive oil
2-3 sprigs fresh rosemary or 1 tbsp dried rosemary
Salt to taste
Directions:
Rinse and cut potatoes into quarters. In a bowl mix together potatoes, olive oil, rosemary, and salt.

Transfer onto baking sheet and bake for 40 minutes at 450 degrees fahrenheit stirring occasionally. Remove from oven when time is done or when potatoes are nice and golden. Serve immediately.
